Light recipe with cod #CleanMonday

I am super excited that you embraced my new attempt to start a new nutrition program and I am happy that many of you send me messages that I motivated to start your own too. 

Due to tomorrow's day that hides lots of calories, I decided to repost a recipe from the site of my nutrionist, Evaggelia Demiri, 

Cod with rukola sauce 



· 4 cod fillets
· 1 tablespoon of oil 
· 350g tomatoe cherries
· Salt / Peper

For the sauce:  

· 2 garlic
· 200g rucola
. 1 tablespoon of balsamic vinegar 
· 2 tablespoon of oil 
· 3-4  tablespoon of water
· Salt / Peper


· Preheat oven to 190˚C.
· Put every cod fillet on an aluminum foil and sprinkle with salt, pepper and oil.
. Wrap it and put it in the oven for 15 - 20 minutes to the oven. 

For the sauce: 
· Put in the blender the garlic, the balsamic and the olive oil. 

· Add the salt and the pepper until it becomes very smooth. 
· Add a little bit of water and your sauce is ready!
